Default Question about Header Images

Are the header images preset by the admin, or can the member adding a review/article change the header image?

I also would like to know if there is a way to disable them all together.

you can set it so that registered members can upload their own custom images, you can have a gallery of preset determined images to choose from set by an administrator also.

I have managed to disable the image but it turns into text, any way to fix this?

Undo whatever you did and instead edit the GARS_threadbit template, adding the bold red bit:
